This is the first type of bread that comes to mind when planning a soul food menu. It dates back to the Native American Indians, who used ground corn for cooking before the European explorers arrived.

Cornbread was popular during the American Civil War because it was very cheap and could be made in various different forms – baked into high-rise, light, fluffy loaves, or muffins, or quickly fried into patties such as Hush Puppies. Any leftover cornbread can be frozen to use in stuffings or Meatloaf, or deep-fried as croutons.
